I like to eggplant, but recently I’ve gotten sick of eating it the only ways I know how to prepare. So I searched and found this dish that keeps the outer shell of the eggplant verses removing it. 1 green bell pepper, minced
1 cucumber, sliced and quartered
1/2 cup sliced red onion
8 ounces crumbled feta cheese
1 lemon, juiced
